1 tsp apple cider vinegar
A pinch of sugar if your cucumbers aren’t very sweet

Step 1: Boil the potatoes
Peel the potatoes and cut them into approximately 4 cm pieces.
Place them in a large pot and cover with cold water. Add a generous pinch of salt.
Bring to a boil, then reduce the heat and simmer. Cook the potatoes until they can be easily pierced with a fork but are not mushy (about 10–12 minutes). Drain them and let them cool slightly. Spread them out on a tray or in a large bowl so they don’t continue cooking from the residual heat.

Step 2: Prepare the dressing.
In a large bowl, combine the following ingredients:
Mayonnaise,
yellow mustard,
sweet relish , apple cider vinegar
(if using),
a pinch of sugar (optional)
. Stir until smooth.
